Thankful for all of the different ways that I can eat potatoes!
/This is one of my favorite side dishes that almost EVERYONE will enjoy!
What you’ll need:
3-4 large sweet potatoes
Olive Oil
1 tbsp Thyme
1 tbsp Rosemary
Salt
Pepper
Cinnamon
Directions:
Preheat oven to 375
Wash and dry sweet potatoes. I like to leave the skin on.
Cut sweet potatoes into 1 inch cubes and place in a large mixing bowl. Drizzle olive oil and mix so that everything is evenly coated. Next, toss in your dry ingredients. Salt and pepper as needed.
On a large baking tray evenly disperse sweet potatoes so that they aren’t on top of each other. This is when I like to put a few dashes of cinnamon on top.
Bake for 45-50 min. Half way through I like to flip them so they cook evenly on both side. Feel free to leave them in longer for added crispness!
